Preheat the oven to 170°C/150°C Fan/Gas 3.
Roughly chop the nuts (or pulse a few times in a blender).
Combine all the ingredients in a bowl and tip onto a large baking tray, lined with baking parchment to prevent sticking.
Bake for 15-20 minutes, stirring halfway. Keep an eye out to make sure they don't turn too dark!
Allow to cool completely, then store in an airtight container for up to 10 days.
